IGNIV Bangkok, the one Michelin-starred restaurant located on Level 1 of The St. Regis Bangkok, welcomes the arrival of summer with a new seasonal menu available until August. Inspired by the vibrant sour notes that define much of Thai cuisine, the 19-dish Summer Menu captures the essence of the season through refreshing acidity, lively flavours, and playful contrasts. The menu is presented as a full tasting experience for dinner, while a more compact version is available for weekday lunches. Selected dishes will also appear as part of the restaurant’s weekend brunch offering.

 

This latest menu draws on Thailand’s natural affinity for bold, vibrant flavours, with particular emphasis on acidity, freshness, and balanced seasoning. Ingredients such as fermented Thai plum, tamarind, Thai olive, kaffir lime, watermelon seeds, and green papaya are woven throughout the dishes, creating layers of brightness softened by subtle sweetness.

Among the highlights is Cornetto–Mango–Tamarind, which pairs ripe summer mango with the rich tang of tamarind, balanced by the crisp texture of a delicate cornetto. Scallop–Watermelon Seeds–Pomelo reinterprets the nutty elements often found in traditional dishes by using watermelon seeds in place of nuts, lending a lighter texture inspired by one of Thailand’s quintessential summer fruits. Trout–Fermented Thai Plum–Chilli showcases a fermented Thai plum sauce delivering pronounced sourness with a lingering sweetness, while Swiss Larb–Waxy Egg–Thai Olive brings together influences from the Alps and Northern Thailand, elevating Swiss beef tartare with toasted rice, savoury Thai olives, and a rich waxy egg yolk for a velvety finish.

 

To conclude the experience, guests are invited to visit IGNIV’s Candy Store, where a selection of sweet treats can be chosen to enjoy alongside tea or coffee or taken home after the meal.

The full tasting menu is priced at Bt5,500++ per person and is available daily for dinner from 6pm – 11pm, as well as at lunch from Monday to Friday between midday and 3pm. Optional signature wine pairings are available, including a four-glass pairing at Bt4,500++ and a three-glass pairing at Bt3,500++.

 

For guests seeking a shorter experience, the Lunch Break menu presents a curated 12-dish selection from the full tasting menu at Bt3,200++ per person, available Monday to Friday from midday to 3pm, with an optional three-glass lunch wine pairing priced at Bt2,500++.

Diners can also enjoy the summer menu as part of IGNIV’s Sunday Brunch.

 

The restaurant’s Weekend Brunch, also featuring a curated 12-dish selection from the Summer Menu, is available on Saturdays and Sundays from 11am – 3pm at Bt3,200++ per person. Vegan, vegetarian, à la carte and children’s menu options are also available, ensuring the experience caters to a wide range of dining preferences. Advanced reservations are recommended.
