Park Hyatt Bangkok invites guests to embrace the essence of the season with its Summer Reverie Afternoon Tea, a refined experience where Pastry Chef Fabrizio Zarate places summer fruits at the heart of every bite. Available until 31st August at The Living Room, this seasonal offering celebrates the vibrancy of sun-ripened ingredients at their peak, expressed through freshness, balance, and clarity of flavour.
Inspired by Mediterranean coastlines, European summer gardens and tropical escapes, the menu is designed to showcase the natural character of summer fruits across each course. From peach and Amarena cherry to mango, fig, passion fruit, apricot, and strawberry, each ingredient is selected for its seasonality and expressive flavour profile.

Highlights of the savoury collection include the Peach & Parma Harmony with ricotta and prosciutto di Parma and the Strawberry Hamachi Crostini, where citrus-cured Hamachi meets green pea, fennel, and black olive for a balanced bite. The experience then unfolds into pastries and desserts, where fruit becomes more expressive through layered textures and intricate techniques. Creations such as Coconut Paradise, featuring mango and passion fruit compote with coconut mousse and Apricot Jasmine, pairing jasmine Chantilly with apricot and almond praline, offer a progression from light, delicate notes to richer, more rounded flavours.
Guests are welcomed with a clarified peach tea complemented by Amarena cherry and peach foam, setting the tone for the experience. Designed for sharing, the elegant Fraisier – featuring Sakura blossom cream, fresh strawberries, and Japanese sponge roulade – adds a refined centrepiece to the afternoon.

To conclude the journey, guests are invited to explore a selection of signature creations from the tea cake trolley.
The Summer Reverie Afternoon Tea is available daily from today until 31st August, from 1pm – 5pm at The Living Room, Level 9, Park Hyatt Bangkok. The afternoon tea is priced at Bt3,000++ per set for two persons.
