This year, MGallery Collection invites guests to experience the bar not simply as a setting, but as a destination in its own right. In collaboration with Michelin-starred chef Pichaya “Pam” Soontornyanakij, the boutique hotel brand introduces an immersive pairing concept that elevates an evening drink into an artfully curated dining ritual.
Following a training and exchange session with Chef Pam in Hong Kong in February 2026, six MGallery properties across Asia will debut this refined experience. Participating hotels include Hotel Naru Seoul Ambassador, V Villas Maldives at Mirihi, Avista Hideaway Patong Resort & Spa Phuket, Hotel Sosei Sapporo, Ming Hotel Nanjing, and The Silveri Hotel Hong Kong. Each location will present a carefully composed pairing of light bites and freshly crafted cocktails, designed to be enjoyed in moments of connection, whether shared with a loved one or discovered with new company.

Maud Bailly, CEO of Sofitel, Sofitel Legend, MGallery and Emblems, describes the collaboration as an evolution of the bar experience. She explains that it moves beyond simple pairings to create a sophisticated dialogue between cuisine and cocktail, reflecting the brand’s commitment to celebrating exceptional women, refining the art of mixology, and fostering genuine moments of conviviality. Chef Pam’s creativity, she notes, brings a new dimension to the MGallery experience, allowing each destination to express its individuality through flavour in a more layered and memorable way.
Chef Pam, founder of Bangkok’s Michelin-starred Potong, is widely regarded as one of the most influential voices in contemporary gastronomy. Named The World’s Best Female Chef 2025 and Asia’s Best Female Chef 2024, her culinary philosophy is rooted in contrast, balance, and storytelling, where flavour becomes memory and texture evokes emotion. This approach aligns naturally with MGallery Collection’s dedication to craftsmanship and meaningful luxury, where each experience is designed to reveal the essence of a place. Beyond her culinary achievements, Chef Pam is also a passionate advocate for women in hospitality, mentoring emerging talent through her Women for Women initiative, adding further depth and authenticity to the collaboration.

Reflecting on the partnership, Chef Pam explains that flavour is a language shaped by contrast, memory, and emotion. Guided by the interplay of five flavours and five emotions, her creations are designed to strike a precise balance that fosters both feeling and connection. With MGallery Collection, she extends this philosophy beyond the plate and into the bar, where each bite is conceived not as a simple accompaniment, but as an intentional composition that creates a dialogue between sip and taste. The result is a shared expression of creativity that transcends borders, while remaining rooted in the soul of each destination.
Crafted to suit the natural rhythm of the bar, the bites are designed for effortless sharing and intuitive pairing. Bold yet balanced, they unfold in layers of temperature, texture, and contrast. Signature creations include Caviar-Crowned Tartare paired with the Prohibition Martini, Tender Temptation Wings served alongside The Botanist’s Waltz, and Sun-Kissed Crab complemented by the Midnight Fizz Society. Truffle Shuffle Polenta is matched with the Cult of Verde, while Squid’s Midnight Dip is paired with the Archive of Tomorrow. Together, they form a cohesive and immersive tasting experience that redefines the relationship between cocktail and cuisine.

Alongside these global signatures, Chef Pam has also developed a series of interpretations inspired by local ingredients and cultural influences. In Thailand and the Maldives, guests can enjoy Shrimp Garden Toast and Air & Fire Corn, while in Mainland China and Hong Kong, Fiery Mantou Bun and Soy-Dipped Purple Fries take centre stage. In Japan and South Korea, the offering includes Tofu & Apple Eclipse and Sea Breeze Tartare. These regional expressions are paired with cocktails such as the Sunset Botanica and Tropic Mirage, ensuring each destination maintains its own distinct identity while remaining part of a unified concept.
Every detail has been carefully considered. Each bite is designed to enhance the drink it accompanies, whether by amplifying botanical notes, balancing sweetness or echoing spice. Though small in size, these creations carry a richness of character that transforms them from simple bar snacks into sensory accents, designed to linger in memory and elevate the entire experience.

World Cocktail Month 2026 will be celebrated across 16 selected MGallery Collection properties worldwide, spanning Europe, Australia, the Americas, the Middle East, and Asia. From heritage landmarks to coastal retreats and design-led urban escapes, each hotel offers a unique setting united by a shared commitment to flavour, creativity, and refined mixology. Chef Pam’s signature bites will be available year-round from 13th May, while the specially created World Cocktail Month cocktails will be offered for a limited period of three months.
