ATLAS Bar in Singapore has unveiled Daughters of ATLAS, a new cocktail menu inspired by myth and the quiet poetry of the constellations. Drawing on the seven sisters of the Pleiades, daughters of the Titan Atlas, the menu unfolds across seven distinct chapters. Each is shaped by the personality and story of a sister, expressed through flavour, texture and character, creating a collection that feels both individual and interconnected.

 

This menu marks a natural evolution of ATLAS’s philosophy of intentional drinking and is the first to be led by Head Bartender Esmeralda Castrogiovanni. Working closely with the team, she has created a menu that reflects both her personal journey and the bar’s established identity, where every detail is carefully considered and each moment carries a sense of occasion from day through to evening. For Esmeralda, the project is deeply personal, shaped by her move to Asia and her admiration for ATLAS’s strong sense of purpose and craftsmanship.

Designed to be experienced progressively, the 16 cocktails move from non-alcoholic to more spirit-forward serves, mirroring the natural rhythm of a day at ATLAS. Each drink is clearly presented with its ABV and flavour profile, allowing guests to navigate the menu intuitively according to mood and preference. As the bar approaches its ninth year, this concept of balance between individuality and cohesion lies at the heart of the menu, much like the Pleiades themselves.

 

The journey begins with Alcyone, whose chapter focuses on clarity and calm through four non-alcoholic cocktails. One highlight is Cartographer, a silky, banana-led creation accompanied by a caramel biscuit and chocolate garnish designed to be enjoyed first, enhancing the drink’s subtle sweetness. While conceived as alcohol-free, these serves can also be adapted with a spirited element.

Merope’s chapter reflects her romantic nature, captured in Golden Hour, a rich and velvety cocktail built around sherry. Combining oloroso and Pedro Ximénez with caramelised roasted butternut squash and finished with fried sage, it evokes warmth and softness. In contrast, Maia, the eldest sister, is expressed through Wingbeat, a composed and herbaceous serve inspired by tzatziki. Dill-infused gin is paired with a house-made cordial, resulting in a clean, lightly creamy cocktail that offers a restrained twist on a gimlet.

 

Taygete’s story of independence and transformation is interpreted in The Doe, a light, floral cocktail blending vodka, peach, and jasmine, rounded with Passito wine for gentle sweetness. Presented in a tulip glass with delicate garnishes, it reflects both elegance and freedom. Electra’s intensity and mystery come through in Apple Aria, where mezcal’s soft smokiness meets the crispness of green apple and a subtle bitterness, lifted by elderflower. A piece of ginger confection is served alongside to heighten the tasting experience.

The final chapter, Celaeno, introduces depth and complexity with The Illusionist, inspired by duck à l’orange. Duck fat-washed rye and cognac are balanced with orange gastrique and finished with champagne, creating a rich yet refined nightcap that reveals layers of flavour with each sip.

 

Alongside this new menu, ATLAS continues to present a curated selection of 17 signature cocktails, reflecting its commitment to timeless classics. These include the ATLAS Martini and a range of gin and tonic variations. A notable addition is the Negroni Ritual, a trio that reinterprets the classic serve through different historical influences, offering guests a thoughtful exploration of flavour and heritage.
