Fairmont Hotels & Resorts, the global luxury brand and part of the world-leading hospitality group Accor, has announced that reservations are now open ahead of the highly anticipated opening of Fairmont Cheshire, The Mere on 10th July. Joining The Savoy, A Fairmont Hotel, Fairmont Windsor Park, and Fairmont St Andrews, the new property becomes the luxury brand’s fourth hotel in the UK. A Beautiful Landmark Reborn

 

Set within 157 acres of Cheshire countryside overlooking The Mere Lake, the landmark estate enters a new chapter following an extensive transformation. Combining the character of a historic country retreat with Fairmont’s signature approach to hospitality, the resort is positioned as a destination for leisure, wellness, dining, and celebrations in the heart of North West England.

Guests will have access to 116 guest rooms, including 23 suites, alongside a collection of dining and lifestyle experiences. Highlights include Gordon Ramsay at The Mere, afternoon tea and champagne at The Orangery, British and Indian cuisine at The Club Lounge, wellness-focused refreshments at Spa Bar, and a range of treatments and experiences at Fairmont Spa. The resort is also home to an 18-hole championship golf course, further enhancing its appeal as a countryside escape designed for both relaxation and recreation.

 

The transformation marks the most significant evolution in the estate’s long history. Mentioned in the Domesday Book of 1086, The Mere has served many roles over the centuries, from private estate and leisure club to one of the region’s best-known hospitality destinations. Its arrival under the Fairmont banner builds on that legacy while introducing a contemporary vision for luxury hospitality, creating a destination that honours its heritage while embracing a new generation of travellers.

The opening follows a £35 million acquisition by Select Group, alongside a further £90 million investment in the estate’s redevelopment. Together, the investment aims to establish Fairmont Cheshire, The Mere as one of the region’s leading luxury destinations and a new social hub for the North West.

In addition to its leisure facilities, the property has been designed to host events of every scale. At its heart is the 1,000-square-metre Grand Ballroom, capable of accommodating up to 1,000 guests for conferences, celebrations, and gala events. The space combines contemporary design with views across the surrounding parkland, creating a versatile setting for both corporate and social occasions.

A collection of boardrooms overlooking the estate provides additional venues for meetings, private dining, and intimate gatherings.
