Suspended high above Bangkok’s emerging On Nut neighbourhood, INNSiDE by Meliá Bangkok Sukhumvit’s awe-inspiring rooftop tapas bar has launched a new menu that pays homage to Spain’s bold regional flavours.
Suspended on the 33rd floor beneath the transparent base of the hotel’s infinity pool, LUZ offers a striking dining experience where guests can look up into the water above while enjoying sweeping views across the city. The new menu, created by Spanish chef de cuisine Juan Ignacio Garcia Racionero, known as Chef Nacho, reflects his Madrid roots and experience across Spain’s leading kitchens, bringing together bold regional flavours in a contemporary setting.

Designed as a journey through Spain’s diverse culinary landscape, the menu draws inspiration from San Sebastián-style pintxos and Basque traditions to Madrid street food, Andalusian seafood and the rice and fideuà dishes of the eastern coast. Each plate is crafted for sharing, encouraging a relaxed and sociable dining experience.
Signature highlights include Steak tartar y Gilda San Sebastián, which pairs Wagyu tenderloin tartare with anchovies and Spanish pickles on ciabatta, and Tacos de Rabo de Toro, where braised oxtail, roasted piquillo peppers and smoked Idiazabal cheese are folded into handmade corn tacos. Seafood takes centre stage with dishes such as Carpaccio de Gamba Roja, featuring delicate red prawns finished with espelette pepper and olive oil, and Lomo de Corvina al Pil Pil, a croaker dish enriched with saffron, yellow chilli and fish collagen.

Further highlights include crispy Pulpo Frito with paprika oil, black squid-ink fideuà with red prawns and octopus, and a classic seafood paella with clams, mussels and squid. Desserts continue the theme with a burnt Basque chocolate cheesecake, warm chocolate fondant and creamy rice pudding with confit strawberries.
Chef Nacho describes the menu as a personal reflection of Spain’s regional diversity, where flavours shift dramatically from one area to another. At LUZ, this variety is reimagined in a way that complements the energy of the space, with dishes designed to be shared over cocktails against Bangkok’s skyline.
