Conrad Bangkok has unveiled the return of its much-anticipated honey afternoon tea with The Conrad Golden Hive Experience at Diplomat Bar. Inspired by the harmony, craftsmanship, and natural rhythm of the beehive, this refined offering celebrates honey harvested from the hotel’s own rooftop apiary, transformed into an elegant expression of flavour and artistry. Available from now until 30th September, the experience invites guests on a golden journey where sustainability, creativity, and modern luxury come together.
High above the city, Conrad Bangkok’s rooftop apiary quietly shapes the essence of the experience. Here, bees move instinctively from blossom to blossom, producing a delicate harvest defined by balance and seasonality. This journey from hive to table is reflected throughout the afternoon tea, where subtle floral notes, gentle sweetness, and a lingering warmth capture the character of the honey at its source.

Served on Diplomat Bar’s signature hot air balloon stand, the presentation is designed as a sensory journey. For this edition, the narrative centres on the rooftop hive, inviting guests to explore its world through a series of refined savoury and sweet creations. Honey and bee pollen are woven thoughtfully into each element, adding depth without overpowering, while textures and aromas create a sense of lightness and discovery.
Curated by Executive Chef Ryan Dadufalza and his Thai culinary team, the menu reflects a careful balance of creativity and precision. The experience unfolds as a twelve-course tasting, moving gracefully from savoury to sweet, with flavours building in complexity before settling into a softly indulgent finish.

The savoury selection introduces honey as a subtle accent rather than a dominant note. Highlights include honey-cured gravlax paired with citrus and dill on a delicate blini, and a refined devilled egg sandwich featuring onsen-style yolk cream and a light floral touch of bee pollen. A mushroom parfait offers earthy depth, while Conrad’s signature fried chicken, served in a soft brioche roll with honey mustard, provides a comforting contrast. Mediterranean influences appear in a caprese tart with stracciatella, basil pesto and aged balsamic, before the savoury course concludes with a caviar and scallop tartare, lifted with green apple, black truffle and a delicate hint of honey.
The transition to sweets allows honey to take centre stage in a variety of textures and expressions. A crisp cannoli filled with ricotta cream and citrus notes is finished with bee pollen, while honey toast layered with vanilla diplomat cream and orange marmalade offers a familiar yet elevated comfort. A Thai-inspired interlude introduces patongo served with honey and condensed milk, alongside a reinterpretation of luk chub with Nam Dok Mai mango.

The finale builds in richness and complexity, from a layered honey mousse with citrus, cardamom and chocolate elements to a lighter contrast of honey-lemon gel paired with dark Chiang Mai chocolate. The experience concludes with warm plain and honey jackfruit scones, served with vanilla Chantilly and passion fruit jam, leaving a final note of warmth and balance.
Complementing the menu is a curated selection of premium Dilmah teas, chosen to enhance the progression of flavours throughout the tasting. The afternoon tea is priced at Bt1,500++ per set for two guests and is available daily from noon – 5.30pm at Diplomat Bar.

To further elevate the experience, a collection of honey-inspired cocktails and mocktails has been created by the bar’s mixologists. Cocktails such as The Toasted Bee, blending vodka, Frangelico, honey and lime, and The Honeyed Countess, combining gin, vermouth and honey with a smooth, rounded finish, echo the depth and warmth of the menu. For a lighter option, mocktails offer equally thoughtful compositions, with floral and fruit-forward notes balanced by honey’s natural sweetness.
