A new fine dining restaurant in Bali makes a refined yet confident debut with the opening of CURE Bali, located within the newly unveiled Regent Bali Canggu. Created by Michelin-starred chef Andrew Walsh, the restaurant introduces a distinctive culinary concept where modern European technique meets the depth and vibrancy of Asian flavours. This opening marks an important expansion of the acclaimed CURE brand beyond Singapore, where the original restaurant earned its first Michelin star in 2021 and secured a place on The World’s 50 Best Discovery list. Known for its ingredient-led philosophy and refined, contemporary approach, CURE has built a reputation for combining classical European foundations with the richness of Asian culinary traditions. Now in Canggu, one of Bali’s most dynamic lifestyle destinations, the restaurant brings a fresh perspective to the region’s growing reputation as a hub for modern gastronomy in Bali.

“CURE has always been about balancing heritage with discovery,” said Andrew Walsh. “Opening in Bali felt like a natural evolution. The island offers an extraordinary energy, exceptional produce, and a deeply rooted culture of hospitality. CURE Bali reflects that spirit, expressing modern European technique through Asian flavours while embracing the warmth that defines Bali.”

 

At the heart of the concept is CURE Dining Room, an intimate seafront restaurant in Canggu where menus are guided by precision and restraint. The culinary approach highlights premium seafood, carefully sourced meats, and seasonal ingredients, allowing flavours to develop through texture and balance. Signature dishes demonstrate this dialogue between regions, such as the Giant River Prawn, which pairs French technique with Southeast Asian brightness through tom yum relish and a rich, aromatic bisque. The Hokkaido scallop offers a lighter yet equally complex interpretation, drawing on Indonesian influences with a delicate composition of scallop, watermelon, and spiced coconut broth.

Complementing the dining experience is Bar Nua, an elegant seaside bar that mirrors the restaurant’s culinary philosophy. His experience in Bali, including time at leading kitchens in Ubud, informs a strong connection to local producers, ensuring the cuisine remains both technically accomplished and authentically expressive.

 

CURE Bali is conceived as a multi-layered culinary destination, encompassing the main dining room, Bar Nua, and the forthcoming Curing Room, an intimate open-kitchen concept offering curated tasting experiences.
