The 5-course dinner opens with Scallop Dumpling paired with a Penfolds Koonunga Hill Autumn Riesling 2022, which is followed by Crispy Duck Sandwich and a Penfolds Bin 23 Pinot Noir Tasmania Hills Henty 2018. The aquatic culinary theme continues with the Fish Maw Soup matched with a Penfolds Bin 23 Pinot Noir Tasmania Hills Henty 2018, Garoupa Fish Roll and a Penfolds Bin 311 Chardonnay Tumbarumba 2018 and Angus Beef Fried Rice and a Penfolds Bin 28 Kalimna Shiraz 2019.
