IGNIV Bangkok, the one Michelin Star restaurant at The St. Regis Bangkok, invites diners to celebrate the season of life with its new Spring Menu, featuring 20 handcrafted dishes in a sharing experience that beautifully combines European and Thai flavours. This season, renowned for its symbolism of rebirth and regrowth, brings a variety of vibrant greens and fresh, seasonal produce to the forefront of the culinary experience.

 

For Head Chef David Hartwig, the spring has always been his favourite season growing up – a time of year he describes as colourful, flavourful and lively which are clearly seen in his latest handcrafted menu.

IGNIV’s Spring Menu features 20 new dishes.

 

“Spring is always a fresh, bright season, representing the rebirth of plants after the winter,” he says. “In Europe, this season brings lots of unique produce which reminds me of what I personally love to eat and what’s available, drawing from my childhood and professional experiences. In Thailand, due to the dry season here, we’ll be embracing more imported ingredients from Europe, whereas still selecting fresh local vegetables. The ingredients of the season include Morels, Tommy Melon, Snow Pea, Green Veggies and Lettuces, Spring Lamb, Ramps, Zucchini and Mango.

 

Each dish includes a classic dish blending tradition and modernity in both presentation and preparation style, including Lamb–Ramps–Tomato, Pork Cheek–Consume–Chorizo–Horseradish, Zucchini–Ratatouille–Potato, and Morels–Ravioli–Vin Jaune. Towards the end of the multi-course gastronomic journey, guests enjoy a choice of house-made macarons, fruit jellies, chocolates and other delights from IGNIV’s signature Candy Store to enjoy with coffee or tea, or to take home.

Setting itself apart from fine dining establishments, the experience at IGNIV is warm, cosy and engaging. Start a culinary journey at the kitchen counter, where welcome snacks are served and guests enjoy the interaction with chefs. Then, move on to your table to appreciate the rest of the meal, with short visits from chefs and service team members to share the stories behind each dish through the entire sharing experience.

 

The Spring Menu at IGNIV Bangkok is available daily for dinner from 6pm – 11pm, last order 8.30pm for Bt5,500++ per person from 1st March – 31st May. Lunch Break is also available on Mondays and Saturdays from noon – 3pm, last order 1.30pm. A vegan, vegetarian, a la carte and kids menu is available to cater to dietary requirements and families. Advanced reservations are highly recommended.
