An Afternoon Tea Experience

To mark Rosewood Bangkok’s 5th anniversary and to celebrate International Women’s Day in March, the hotel’s Executive Chef Dustin Baxter is taking guests on an afternoon tea experience inspired by an imaginary flower garden in collaboration with Tawn C., served exclusively at the Lakorn European Brasserie.

 

The concept, called ‘In Her Garden’, features floral-pattern boxes of delicacies designed by Tawn Chatchavalvong, Tawn C.’s eponymous award-winning fashion designer and television personality. The afternoon tea experience comes complete with a whimsical tea set design, bringing guests on a journey through three acts of a woman’s life.

Where would you start your afternoon tea journey?

 

Act 1 celebrates life of a young lady, interpreted as Young Hokkaido Scallop combined with Oscietra Caviar, Grapefruit and Lotus Flower Petal. Act 2 celebrates maturity into a young lady, with the elegant Smoked Salmon Sphere and Free Range Chicken Wellington. Act 3 celebrates the stage in a woman’s life when she has found her passion, nurturing the love in everything, illustrated with the exquisite Wagyu Beef Tom Yum with Crispy Fragrant Peppers, Sesame and Gold Leaf.

 

Tawn C’s vision of desserts also includes a White Chocolate Madeleine filled with lemon curd and pistachio paste to reference the young lady in act one, and the layered textures of the Bittersweet Chocolate Financier as she blooms into a mature lady.

The Garden Afternoon Tea Trolley complements this three-act journey with enchanting sweets created by Chef Dustin, who drew inspiration from Tawn C.’s gowns and his vision. A Strawberry Tart is decorated with flowers found on Tawn C.’s gowns, and butterflies that the chef sees in the garden. Local honey is infused into the Canelé to pay tribute to honeybees that flowers attracts, while the Tropical Éclair brings to mind summertime flowers.

 

Chef Dustin also pays homage to Tawn C.’s love of the rose in Raspberry Rose, featuring lychee compote, and raspberry rose crèmeux, shaped into a carnation that the designer was wearing on his jacket when they first met.

 

The high tea experience comes complete with Blueberry Cheesecake with Kiri Cream Cheese and Yuzu Berry Compote to share, and Strawberry Scones, served with Raspberry & Vanilla Jam and Clotted Cream.

The ‘In Her Garden’ Afternoon Tea is served daily from 2pm – 5pm until 31st May, at Lakorn European Brasserie for Bt2,900 per couple. Guests can also elevate the experience with two glasses of French Bloom Brut or Rose Non-Alcoholic Champagne for Bt4,100 per couple, or two glasses of Gremillet Brut or Rosé Champagne for Bt4,600 per couple.
