A Regal Dining Experience

A Regal Dining Experience

Songkran marks the beginning of a new year on the Thai calendar. During these auspicious days, family and friends gather to ring it in with water-blessings and cherish their time together. For this year’s Songkran festival, Capella Bangkok will elevate these festivities with a regal dining experience featuring khao chae – a traditional Thai summer delicacy.

Throughout April, Chef Kannika Jitsangworm, Capella Bangkok’s Thai Chef de Cuisine, will cook up khao chae, a beloved Thai simmer treat. Derived and adapted from a Mon tribe recipe, the summertime delicacy is made of rice soaked in jasmine water and served with a range of savoury and sweet condiments, including luk krapi tord (deep-fried shrimp paste balls), prik yuak sod sai moo sup (stuffed chilli pepper with minced pork), moo foi (sweet shredded pork), stir-fried sweetened radish and pickles. With sustainability in mind, Phra Nakhon’s take on khao chae eschews the traditional yi-son fish side dish, made from endangered stingray, for a sustainably-caught alternative.
