Executive Chef Apisit ‘Bomb’ Chaichana, who was born and raised in the Mai Khao area, has developed a network of like-minded suppliers who share his passion for the environment. This focus on local and seasonal ingredients not only creates original dining experiences; it also helps to support Phuket’s farmers and reduces the carbon emissions associated with transporting goods long distances. Two of Chef Bomb’s signature dishes that will give diners a true taste of Mai Khao Beach are phad pak rin han, which showcases the unique flavour of a native species of sea grass, and Phuket Lobster Sunrise, which uses fresh, locally-caught Phuket lobsters.
