Six Senses Samui is stepping into the new year with an initiative that embodies the resort’s commitment to sustainability and the group-wide Eat With Six Senses philosophy while enhancing the overall guest experience. It is introducing “A Year of Sustainable Culinary”, a series of quarterly culinary events throughout 2024 that will not only tantalise the taste buds, but also champion environmental stewardship, each focusing on specific aspect of sustainability.

 

In January, Six Senses Samui will begin its sustainability celebrations with “ABC – A Blissful Culinary by Chef Deepanker” of Haoma. With one Michelin Star, Haoma is also the only Michelin Green Star restaurant in Bangkok, recognised for sustainability. Truly inspired by Farm on the Hill, this event will showcase dishes that Chef DK will prepare exclusively with ingredients sourced and inspired from the farm, local farmers and artisans. Diners will indulge in a culinary journey that highlights the richness of the region’s agriculture.

The celebration continues in the second quarter of 2024 with “H&H – Happy Harvest”. This event will embrace organic produce and feature an array of mouthwatering dishes prepared entirely from organic ingredients proving that sustainable dining can be both delicious and satisfying, and encouraging guests to explore organic options, paired with organic and sustainable wines.

 

“M&M – Marine to Mountain Munches” will be the third quarter’s culinary event theme, based on a collaboration between Chef Kien of Six Senses Samui and Chef Isa of Six Senses Bhutan. Chef Kien will be crafting delectable seafood dishes, emphasising the importance of protecting marine ecosystems for future generations. While Chef Isa will be focusing on forging the forest of Bhutan and bring it to the plate with local ingredients, wherever possible.

The final culinary theme of the year, “W&W – Waste You Would Want”, will focus on zero waste gastronomy, where reducing food waste is a crucial part of the mission. During this event, Six Senses Samui’s culinary experts will demonstrate innovative ways to minimise waste, transforming leftovers into gourmet delights and luscious drinks. Diners will be inspired to adopt eco-friendly practices in their everyday lives.

 

The seven-course ABC dinner by Chef DK on 4th and 6th January, 2024 is priced at Bt4,200++ per person with two exclusive seatings at 5.30pm and 8.30pm. Only limited spaces are available.
