The St. Regis Bangkok has announced the appointment of Brian Rodriguez as its new Executive Sous Chef, entrusted with leading the culinary teams to new heights at VIU, The St. Regis Bar, The Lounge, The Drawing Room, Pool Bar and in-room dining. Chef Brian will showcase his many culinary talents, crafting classics with a playful twist and adding on a local touch.

 

An award-winning chef, he brings more than 10 years of gastronomic excellence from five-star hotels and notable establishments in the UAE, Austria, Australia and Italy, including Uliassi, now a three-Michelin-starred restaurant in Senigallia. He joins The St. Regis Bangkok from Waldorf Astoria Ras al Khaimah, UAE, where he initially started as Chef de Cuisine before his promotion to Executive Sous Chef.

Chef Brian has honed his eye for detail along with an international culinary palate, developing an artistic sense and impeccable attention to the fine detail. Building on his Italian and European culinary roots, he is passionate in using local ingredients to add different perspectives and connect classic recipes with his chosen destination of residence. His personal experiences, including locations where he lived and chefs whom he worked with, are the main inspiration of his culinary creations. He draws on his personal memories for his creative process, allowing him to continuously evolve and push his boundaries.

 

The dynamic Italian-Peruvian chef’s achievements stand as a testament to his exceptional skills. In 2021, he secured the Gold Medal at “The Chef’s Table” during The Hotel Show, a recognition of his artistry. He also earned the Dubai 2021 TripAdvisor Travelers’ Choice Award for Piaceri da Gustare and SOL Beach and Lounge Bar, underscoring his dedication to culinary excellence. Chef Brian’s expertise led him to become a panelist chef for the Sheikh Saud bin Saqr Al Qasimi Foundation, where he contributed his insights to the topic of “Exploring the Culinary World.”
