The Enchanting Winter Season

Sra Bua by Kiin Kiin at Siam Kempinski Hotel Bangkok, the renowned one-Michelin-star restaurant for six consecutive years, welcomes the enchanting winter season with the new ‘Winter Journey’ menu. Sra Bua by Kiin Kiin continues its renowned modern-Thai cuisine by consistently crafting one-of-a-kind, mouthwatering dishes created by the masters of award-winning Michelin-star chef Henrik Yde-Andersen and senior head chef Berm Chayawee Suthcharitchan.

The heart of the ‘Winter Journey’ menu is designed to reflect the ‘Sense of Thailand’ highlighting the unique touches of Thai ingredients, including spices, herbs, seasonings and fragrances. Inspired by the ‘winter season’, Chef Henrik and Chef Chayawee join hands to develop menus using the finest winter-time ingredients in each dish.

The ‘Winter Journey’ menu embraces 16 invigorating courses, beginning with Sra Bua by Kiin Kiin’s famous eight ‘street food’ canapés to delight guests upon arrival at the lounge, and was inspired by Chef Henrik’s gastronomy travels. It includes the all-time favourite soy meringue with wasabi yoghurt; a moon food edible bag with puffed rice-flavoured ‘tom yum’; ‘pad krapow’ stir-fried basil with squid; crispy chicken skin with ice cream satay; yellow curry crab ice cream cornetto; and more, which have been incorporated into his street food bites.

The journey continues with the ninth course at the dining table, with the signature ‘five-spice duck consommé’ served with two homemade duck condiments, including duck sausages and laab duck. This menu was inspired by mulled wine traditionally made from European Christmas spices during the festive season. The tenth course features a refreshing salad of ‘Hokkaido scallop with green capsicum, grilled cucumber and cotton candy’ that will tantalise your taste buds.

This leads into the 11th course, presenting the rich flavours of morel mushrooms and the enticing aroma of black truffle with ‘Tom Kha morel mushroom stuffed, tagliatelle mushroom jelly and fresh black truffle’. The 12th course portrays the ‘ravioli Canadian lobster with Tom Yum lobster bisque, with a creamy and savoury taste that cannot be missed.

The 13th course presents a ‘warm beetroot gratin with salt cod fish, basil and green curry ice cream’ that completes this dish. The 14th course is the famous main-course dish serving Massaman grilled veal striploin and sweetbread with the earthy allure of sunchoke chips, pickled onions and onion chips served with aromatic jasmine rice from Yasothon province.

The excitement is not yet over as this 16-course journey concludes with classic European desserts and a touch of Thai to celebrate the meal. The 15th course represents the ‘Citrus of Thailand’ with the sweet and sour ‘lime foam with pomelo sorbet, citrus herbs and salted meringue’. Last, but definitely not least, the meal finishes with the 16th course, ‘Mekong’ Thai rum flambé baby pineapple with coconut and pineapple ice cream presented with artistry, before concluding with the imaginative and creative petit fours.

Each dish on the ‘Winter Journey’ menu is a masterpiece of culinary artistry with a fusion of flavours, textures, presentations and captivating stories that pay homage to the beauty of the winter season. To complement this fantastic dining experience, there are a selection of beverage pairings, including wine pairings, Thai-inspired craft cocktails, or locally brewed beers.
