I wanted to pay tribute to the diversity and uniqueness of craft chocolate from around the world and shine a light on growers that follow sustainable practices at their farms.”

Capella Bangkok’s Signature High Tea: The Chocolate Journey blends innovative culinary creations with an exquisite range of fine tea blends by Mariage Frères, meticulously selected to offer a perfect pairing with the intense and indulgent flavours of the chocolate-laced treats that accompany them.
Each culinary journey commences with the Tea Lounge’s signature Tea & Herb Trolley, from which guests can pick their favourite Mariage Frères blend. Highlights include the tea house’s premium Paris – Bangkok, an exceptionally well-crafted black tea exclusively available at Capella Bangkok.

The journey continues with four fine savouries, including cold smoked duck breast with artichoke, cranberry and cocoa; spiced macaron with foie gras and lavender jelly; crab and asparagus panna cotta with hollandaise and prosciutto; and smoked tuna and unagi brochette with fig miso and ginger. The exquisite delights are followed with chef Constans’ freshly baked scones, available as both a classic scone and a chocolate chips version, which both come served alongside house-made strawberry jam, clotted cream, and chocolate and hazelnut spread.
Sweet-toothed guests will be delighted to see the dessert trolley roll in. On it, up to six chocolate-filled treats crafted with premium cacao are available to choose from:
Tulakalum 75%: Chocolate from single origin Belizean cacao, with a fruity and tangy cacao nib aroma encapsulating the country’s verdant landscapes and rich cultural history. A scrumptious combination with spicy sable and pineapple.

Nyangbo 68%: Sweetly spiced, Ghana’s single origin cacao with hints of vanilla is incorporated into a chocolate-filled and indulgent Paris-Brest.
Bahibe 46%: The gushing waterfalls of the Dominican Republic are channeled through a powerful dash of cacao, which delivers notes of ripe fruits and pairs harmoniously with the tropical flavours of banana and passionfruit jelly.
Chiang Mai 70%: Organic chocolate grown in Mae Teang, Chiang Mai boasts a delicate floral note with exotic fruitiness. It is transformed into a delicious financier with a touch of cherry jelly and kirsch Chantilly.
Raspberry Inspiration: Raspberry-flavoured chocolate, which evokes a delightful aroma of homemade raspberry jam, is given a nutty softness from pistachio Chantilly and crunchy sable.
Caramelia 36%: Richly flavoured chocolate with a lavish touch of salted caramel is the key ingredient to this scrumptious treat with caramel sponge, lemon jelly and peanut crunch.

For a truly indulgent experience, the Tea Lounge also offers the choice of Capella Bangkok’s Signature Diamant Champagne, bottled exclusively for the hotel by the Vranken Pommery house, or a selection of Mariage Frère tea-infused cocktails and refreshments.
