The secret to the 2021 Winter Journey set menu is the collaboration between award-winning Michelin-star chef Henrik Yde-Andersen and chef Chayawee Suthcharitchan, the head chef at Sra Bua by Kiin Kiin. These culinary masterminds have once again joined hands to create dishes based upon the delicious tastes and refreshing flavours found with the best-quality winter seasonal ingredients.

The Winter Journey menu, comprising eight tantalising courses, begins with Sra Bua by Kiin Kiin’s famous street food nibbles to delight guests upon arrival.

The captivating journey begins with an iconic dish of Tom Yum Kung with DIY instant tofu noodles served with three kinds of prawn, featuring Tom Yum prawn with prawn shumai, prawn bread and prawn cracker. The second course features a Thai-style ceviche of Hokkaido scallop marinated with a Thai yum dressing and presented in an Eskimo igloo dome served with grilled cucumber, mint and coriander.

Another signature menu of Chef Chayawee is his homemade yellow curry paste recipe from his home-town in Ranong province mixed with crab meat from Surat Thani province, served with celery and fermented garlic, which cannot be missed. The new menu, featuring frozen wagyu shabu beef carpaccio marinated with basil, aioli and served with warm ponzu sauce, is tantalising for beef lovers. The main course highlight features Tom Kha snow fish with wild mushrooms, flan and black truffle served with Thai jasmine rice from Surin province.

This amazing eight-course set dinner concludes perfectly with truly mesmerising and enchanting desserts. The first dessert begins with beautiful Flowers of Thailand, comprising various flower fragrances, including jasmine, elderflower, lavender and rose; and a touch of refreshing sweet-and-sour taste. This is followed by the finale dessert: Crêpes Siam Kempinski, inspired by the traditional crêpes Suzette, served with Thai coconut ice-cream, mango passion fruit sorbet and caramelised flambé sauce, which is a special surprise, before concluding in style with the imaginative and very creative petit fours.
