Five Nights With Chef Tam

Scarlett Wine Bar & Restaurant at Pullman Bangkok Hotel G is thrilled to welcome Chef Tam, winner of “Top Chef Thailand” as its special guest chef from 23rd – 27th November.

 

Chudaree Debhakam, better known as Chef Tam will make her debut as the first female guest chef at Scarlett Wine Bar & Restaurant. For five unforgettable nights, she will collaborate with Scarlett’s talented team in the creation of seven irresistible à la carte menu items. Combining the culinary DNA of Chef Tam and Scarlett, each outstanding dish will be the perfect blend of Thai ingenuity and French cooking techniques.

 

At just 24 years of age, Chef Tam was the very first winner of Top Chef Thailand, which premiered earlier this year. She beat 14 other experienced Executive Chefs from renowned restaurants in Thailand by impressing the judges with her creative cuisine and calmness under pressure.

A graduate of Nutrition and Food Science at the University of Nottingham in England, Chef Tam returned to Thailand to work in a restaurant in Bangkok. She then followed her passion for the farm-to-table philosophy with further studies in the USA before working as a Sous Chef alongside award-winning chef, Dan Barber at Blue Hill at Stone Barns, New York. The restaurant, which is an advocate for locally sourced seasonal ingredients, is known as one of the best dining experiences in America and is number 11 in the World’s 50 Best Restaurants, 2017.

 

At Scarlett Wine Bar & Restaurant, Chef Tam’s will add a personal touch to fabulous à la carte menus that showcase Scarlett’s premium quality imported produce and sustainable ingredients from across Thailand.

Chef Tam’s inspired menus will include highlights such as chicken liver mousse with spiced tamarind and grilled sourdough and enticing cured seabream with local citrus and lemongrass oil. The creative and distinctly contemporary menu will also include lamb shank massaman curry pie with creamy mash and baby vegetables, whole quail with a pork and chicken stuffing, butternut squash ginger purée and sweet peas, succulent spice rubbed beef ribeye with smoked peanuts and fennel purée and grilled tiger prawns with charred Romesco, grilled greens and a prawn reduction. There are also divine desserts like sticky banana brioche with toasted rice ice-cream.
